Cappuccino Crinkle Cookies (60 calories)

I was skeptical at first since the ratio of yogurt and butter seem all off but these worked out really well. Theyre really really messy though. I mean messy. Luckily, I had a batter knife, butter knife (for scraping the batter off the batter knife), a deep mixing bowl, and a mini ice cream scoop.


1/4 cup butter, softened (no substitutes!)
1/2 cup brown sugar
1/3 cup unsweetened cocoa powder
1 tablespoon instant coffee granules (I used sugar free suisse mocha)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 egg white
1/4 cup fat-free vanilla yogurt
3/4 cup all-purpose flour
1/4 cup sugar or sprinkles (for rolling)

In a deep mixing bowl, cream together butter and brown sugar. Add yogurt and egg white. In a separate bowl add all dry ingredients together and mix well untill flours are well combined. Using an electric mixer (or a really strong arm), gradually beat the dry ingredients into the wet ones, scraping the sides of the bowl occasionally. In a shallow bowl, pour in sugar (or sprinkles). Drop dough by heaping teaspoons into sugar and roll into balls, coating it in sugar. Place balls 2 inches apart on a nonstick cookie sheet. Bake on 350 for 8-10 minutes.

You can choose to roll the cookies in sugar. I reccommend just dropping the cookies on the sheet and sprinkling the tops with powdered sugar because the actual cookie isn't all that sweet. These were lightly crispy on the outside and kind of brownie/cake-like on the inside. Really cute with sprinkles too. :D

With sugar/sprinkles- 60 calories, 2g fat, 10g carbs.
WithOUT sugar/sprinkles- 50 calories, 2g fat, 6g carbs.
With Splenda & sprinkles- 45 calories, 2g fat, 6g carbs.
With Splenda- 40 calories, 2g fat, 4g carbs.

60 calories. 2g fat.

Back on track, baking-wise.
Its an unhealthy addiction. Thankfully there are willing people to force feed these to. ♥
